A family of Syrian refugees who started afresh in Yorkshire hope to corner a share of the UK’s halloumi market with their ‘Squeaky Cheese’.
According to the Mail Online, Razan Alsous and her husband Raghid, decided to make their own version of halloumi when they could not find any in Huddersfield, where they settled in 2012.
Their Yorkshire Dama Cheese company currently produces 2500 blocks of Squeaky Cheese — made only of cow milk — a week which is sold on line and at some shops. Future plans are to increase production and make the cheese available at supermarkets.
On Sunday, the Mail Online had reported that British supermarkets had run out of halloumi, made of a blend of cow and goat milk — with one Cypriot producer due to transport fresh stocks by truck in order to speed up delivery.
Mail Online quoted Razan as saying she had initially decided to make the halloumi at home because she could not find it at her local supermarket when the family first moved to the UK. From there, production moved to other premises and they now operate from an industrial unit in Halifax, making cheese and yoghurt.
