Place the grated zucchini in a strainer, add salt and set aside for ½ an hour in order for their excess water to drain. Squeeze the mixture in the palm of your hands to get rid of all the water and put in a small basin.
Add the onion, dill, parsley, mint, feta, walnut, salt, pepper, flour and eggs to the zucchini and knead the mixture. Shape them into equal round burgers.
Heat enough olive oil and fry the meat balls on a medium high heat until they brown on each side. Serve warm, accompanied with tzatziki.
3 cups zucchini, grated
2 cups fresh spring onions, finely cut
4 eggs slightly beaten
2 tbsps flour
1/3 cup finely chopped dill
1/3 cup finely chopped parsley
3 tbsps finely chopped fresh mint
½ cup grated feta
2/3 cup finely chopped walnuts
Olive oil for frying
Tzatziki for serving
