Chicken with orange and thyme

Preheat the oven to 180°C. Warm up the oil in a frying pan and fry the chicken pieces until golden. Place them in an ovenproof tray. In a small saucepan warm up the liqueur, set it alight and pour over the chicken. When the flames go out drizzle the chicken with the orange juice and sprinkle the orange zest, thyme, salt and freshly grinded pepper on top. Place the tray in the oven and cook for about 45 minutes.

Ingredients:

1 chicken, cut in pieces
1 ½ cups fresh orange
juice (4-5 oranges)
The peel of 2 oranges
(the orange bit),
cut in strips
60ml (4tbsps) Grand Marnier
1 tbsp fresh thyme leaves
2-3 tbsps sunflower
or corn oil
Coarsely ground salt
Black pepper
