Vegetarian ‘meatballs’ (Lenten)

Peel the potatoes, grate them and strain them.
Grate the onions, carrots and courgettes but do not strain them. Mix them in a bowl with the potato, olive oil, bread crumbs and salt.
Use the mixture to make circular, flat patties, cover them in flour and fry the patties in plenty of hot oil.


700g (2 large) potatoes
300g (3 medium) onions
500g (3 medium) courgettes
300g (4 medium) carrots
1/4 cup of olive oil
1/2 cup of bread crumbs (toasted)
A bit of flour
Oil for frying
