Beat the tahini with water, salt and garlic in a blender for a few seconds, and then add the lemon juice a tablespoon at a time with the blender still going. Season with salt to taste, and serve sprinkled with parsley


2/3 cup tahini
1-2 cloves of garlic, sliced (optional)
2/3 cup water
6 tbsps lemon juice
Salt (½ level tsp)
Finely chopped parsley to serve
