Skordalia (Garlic paste)

Rinse the potatoes and place, unpeeled, in a saucepan. Cover with water, add salt and allow to simmer for 20-30 minutes until soft. Drain, cool under running water and peel.
Meanwhile, crush the garlic with salt in a pestle and mortar, until it becomes a paste.
Mash the potatoes, either with a fork or a masher (never in a blender), adding the olive oil until well blended. Add the lemon juice, vinegar and garlic paste a little at a time. Finally, mix in the milk until it becomes a smooth paste, and season with salt to taste

1kg potatoes (approximately 6 medium ones)
5 cloves of garlic, crushed
1/3 cup olive oil
4 tbsps lemon juice
4 tbsps vinegar
4 tbsps milk
Salt
